Most of what you call taste is really smell. Send food molecules to a real 3D tongue and up the back way to the nose, then pinch your nose and taste the difference.
Your tongue senses only five basic tastes. Your nose senses thousands of smells, and your brain mixes the two into flavor.

The head is cut down the middle so you can look inside. Pick a food and watch its molecules take two roads. Some dissolve in saliva and reach the taste buds, which sit all over the tongue. Others float up behind the roof of the mouth into the nose: the back door. Now pinch the nose. The second road is closed, and the brain can only say sweet, sour, salty, bitter, or umami. Try the chili, too!

The skull bones and the tongue are real shapes from BodyParts3D, in their real places; the face outline, the soft palate, the taste buds, the smell patch, the nerves, and the two magnified views are our own drawing. Real taste buds and smell cells are far too small to see, and real molecules are about a million times smaller than these dots. The colors and the bars are for teaching: a real food has many more molecules than the few shown here. The model has no teeth, because BodyParts3D does not include them.

Reading ·
Pinch your nose shut and pop a fruit candy into your mouth. It is sweet, and maybe a little sour, but which fruit is it? You cannot tell. Now let go of your nose. Strawberry! What happened? The thing you call “taste” is really two senses working together. Your tongue does one part of the job, your nose does the other, and your brain mixes them into one thing: flavor.
Look at your tongue in a mirror. The little bumps are called papillae, and they are not taste buds. The taste buds are hidden in the sides of many of those bumps, and they are much too small to see. You have several thousand of them: most are on your tongue, and some are on the roof of your mouth and in your throat. Each taste bud is a tiny bundle of taste cells with a small opening at the top. When food dissolves in your saliva, its molecules wash into that opening, and the taste cells send a signal along nerves to your brain. Taste cells wear out fast, so your body replaces them about every ten days. That is why a burned tongue feels normal again so soon.
Taste cells can report only five basic tastes: sweet, sour, salty, bitter, and umami. Scientists think each one is a useful message. Sweet means sugar, and sugar means energy. Salty means minerals your body needs. Sour means acid, as in a lemon or in fruit that is not ripe. Bitter is a warning, because many poisons are bitter. Umami is the savory taste of broth, mushrooms, and cheese, and it tells you that a food has protein. It was the last of the five to be named: in 1908, the Japanese chemist Kikunae Ikeda found it in kelp broth.
You may have seen a map of the tongue that puts sweet at the tip, sour and salty on the sides, and bitter at the back. The map is wrong. Every part of your tongue that has taste buds can sense all five tastes. The mistake is more than eighty years old. In 1901, a German scientist measured very small differences from one part of the tongue to another. In 1942, an American textbook drew those results as a simple chart, and readers took it to mean that each area senses just one taste. You can test this yourself with a little sugar: you will taste it wherever it touches.
So where does “strawberry” come from? From your nose. High inside it is a small patch of smell cells, with about 400 kinds of smell sensors. Every smell switches on its own mix of sensors, like a chord played on a piano, and that is how you can tell thousands of smells apart. Smells reach the patch by two roads. The front door is your nostrils: you sniff. The back door is a passage that joins the top of your throat to your nose. While you chew, smell molecules from the food float up through this back door. Pinch your nose, or catch a cold, and that air cannot move. The food seems to have almost no flavor at all.
And what about spicy food? Spicy is not a taste. The chemical in chili peppers switches on nerves that feel pain and heat, the same nerves that warn you about soup that is too hot. That is why spicy food “burns.” Mint plays the opposite trick: it switches on nerves that feel cold. Your brain adds these feelings to taste and smell, along with the crunch and the warmth of the food, and the result is the flavor of your lunch. Now find a partner and try the pinch test below the model.

Your Flavor Team ·
Think of a band: the tongue plays five notes, the nose plays thousands, the nerves add the drums, and your brain hears one song. That song is flavor.

Each one is a bundle of taste cells shaped like an onion. The cells are replaced about every ten days.
Taste cells can only sense what is dissolved. Dry your tongue with a clean tissue, and a bit of sugar has almost no taste until it gets wet.
It has about 400 kinds of smell sensors. Smells get there through the nostrils or through the back door from your throat.

Myth vs. Fact ·
Different parts of the tongue sense different tastes.
Every part of the tongue that has taste buds can sense all five tastes. The famous tongue map came from a 1901 study that was misread in a 1942 textbook.
Spicy is one of the basic tastes.
Spicy is pain and heat. Chili switches on the same nerves that warn you when food is too hot, not the taste buds.
The bumps on your tongue are your taste buds.
The bumps are papillae. Taste buds are hidden inside many of them and are too small to see without a microscope.
When you have a cold, your tongue stops working.
Your tongue is fine: you can still tell sweet from salty. It is your stuffy nose that keeps smells away from the smell cells, so food seems to have little flavor.

In Chinese ·
Chinese has talked about 五味 (wǔwèi), the “five flavors,” for more than two thousand years: 酸甜苦辣鹹, sour, sweet, bitter, spicy, and salty. Four of them match the basic tastes of modern science. The fifth, 辣 (là), turns out to be pain, not taste. And the one that science added in 1908, umami, already had a Chinese word: 鮮 (xiān), written with the characters for fish 魚 and sheep 羊. When people feel happy, sad, and sorry all at once, they say 五味雜陳, “the five flavors are all mixed together.” Your brain mixes flavors, and it mixes feelings too.

Teaching tip: check for food allergies first, and have everyone wash their hands. Apple and pear are both sweet and crisp, so with the nose pinched, many students do little better than guessing. Ask older students: why do we need five tries, not one?
Classroom Activity 2 ·
You need ·
Steps · 步驟
Teaching tip: do not touch too far back, which can make students gag, and never share swabs. Students may find that the very middle of the tongue is weak for every taste, because it has few taste buds. That is a real finding. What they will not find is a “sweet-only” tip or a “sour-only” side.
This lesson is for learning about the body. It is not medical advice. Before any tasting activity, check for food allergies, and wash your hands. Sit down, take small pieces, and chew well, especially while your nose is pinched. Never taste something if you do not know what it is.
