A refrigerator does not make cold. It carries heat out of the food and into your kitchen. Follow the refrigerant around a see-through 3D fridge, then open the door or pull the plug and watch the inside warm up.
A refrigerator does not make cold; it moves heat. A liquid called refrigerant evaporates in tubes inside the refrigerator and soaks up heat from the food. A compressor then squeezes it until it is hot, and a coil on the outside gives that heat to the kitchen. Then the refrigerant goes back inside and does it all again.

Drag to turn the view, and scroll or pinch to zoom. You are looking at a see-through refrigerator from behind. Follow the dots from 1 to 4: red means hot, blue means cold. Orange glows are heat, leaving the food and leaving the coil on the back. Press “Open the door,” switch off “Plugged in,” or make the kitchen hotter, and watch the temperature inside.

A teaching model. The temperatures come from a simple calculation, not from a real refrigerator, and one second here stands for about four minutes. The bars use example numbers (2 parts of heat moved for 1 part of electricity); real refrigerators differ. The tubes are drawn thicker and far fewer than real ones, real refrigerant stays sealed inside the tubes where you cannot see it, and many refrigerators hide the outside coil in their walls.

Open the refrigerator on a hot day and cool air touches your face. Now put your hand on the side of the refrigerator, or near the back. On many refrigerators it feels warm! Why would a machine that keeps food cold be warm on the outside? The answer tells you how a refrigerator really works.
A refrigerator cannot make cold, because cold is not a thing. Cold just means less heat. So a refrigerator does only one job: it takes heat out of the box and puts it somewhere else. To do that, it uses a trick you already know. When you climb out of a swimming pool, the water on your skin dries and you feel chilly. A liquid that evaporates takes heat away with it.
Inside the walls of a refrigerator there is a long tube with a special liquid in it, called refrigerant. In the part of the tube that is inside the box, the refrigerant is very cold, colder than the food. It evaporates and turns into a gas. As it does, it soaks up heat from the air and the food, just like the water drying on your skin.
Next the gas goes to the compressor, the part that hums at the bottom of the refrigerator. The compressor squeezes the gas hard, and squeezing makes it hot, hotter than your kitchen. The hot gas flows through a coil on the outside. There it gives its heat to the room and turns back into a liquid. Then it is pushed through a very thin tube. Its pressure drops suddenly, it becomes very cold, and it goes back inside to start again.
People have used this idea for a long time. In 1834 Jacob Perkins built the first working machine that cooled things this way. Before home refrigerators, families kept food cold with big blocks of ice. The first electric refrigerators for homes were made in 1913. Today the refrigerant in most new refrigerators is a gas called isobutane.
Here is a puzzle. On a hot day, can you cool the kitchen by leaving the refrigerator door open? No! The heat taken from inside comes right back out of the coil into the same room, together with the heat from the electricity. The kitchen gets warmer. So close the door quickly, do not pack the refrigerator too full, and leave some space around it so the heat can get away.

Watch the three bars: the heat sent to the kitchen is always the heat taken from inside plus the electricity used. That is why an open refrigerator can never cool a room.
The compressor runs until the inside is cold enough, then rests. A little heat leaks in, and it starts again. That is why a refrigerator hums, goes quiet, and hums again.
Warm air pours in faster than the refrigerant can carry heat away. The inside warms up even though the compressor never stops.
The dots stop. Nothing is moving heat out, so the inside slowly climbs to the temperature of the kitchen. A closed door slows this down.
More heat leaks in from a hotter room, so the compressor has to run longer and rest less. That uses more electricity.

Myth vs. Fact ·
A refrigerator makes cold and puts it into the food.
There is no such thing as cold to add. A refrigerator takes heat out of the food and moves it to the room.
Leaving the refrigerator door open will cool the kitchen.
The heat comes right back out of the coil into the same room, plus the heat from the electricity. The kitchen gets warmer.
If the outside of the refrigerator feels warm, it is broken.
That warmth is the heat that was carried out of the food. Leave space around the refrigerator so it can get away.
Food in the refrigerator never goes bad, because the cold kills germs.
Cold only slows germs down; it does not kill them. Food in the refrigerator still spoils, just more slowly.
A refrigerator does not make cold. It carries heat out.
Evaporating soaks up heat inside. Squeezing makes the gas hot enough to give that heat away outside.
The heat you feel on the outside came from the food inside.
More heat always comes out than was taken in. An open door cannot cool a room.
