Water only只用水

Water alone slides right over grease. A soap molecule has one end that loves water and one end that loves oil, so it can grab both. Zoom in on a patch of grease in 3D and wash it three ways: water only, soap without rubbing, and soap with rubbing.
Oil and water do not mix, so water alone cannot wash grease away. A soap molecule has a head that loves water and a tail that loves oil. The tails push into the grease while the heads stay in the water. Rubbing breaks the grease into tiny drops, each one wrapped in soap, and then the water can carry them away.

Drag to turn the view, and scroll or pinch to zoom. The yellow lump is grease stuck to skin, and water is flowing past it from left to right. Pick a way to wash on the right, then watch, or drag the time slider back and forth. The three bars compare how much grease each way leaves behind at the same moment.

A teaching model, not a measurement. The percentages come from a simple formula chosen to show the pattern (water barely helps, soap helps, soap with rubbing helps most); they are not results from an experiment. Real soap molecules are far too small to see, even with an ordinary microscope, and a real patch of grease would hold more of them than anyone could count.

Reading ·
After lunch, try to wash an oily lunch box with water only. The water runs off, and the box is still slippery. Add a little dish soap, rub, and rinse. Now it is clean and squeaky. What did the soap do that the water could not do alone?
The trouble is that oil and water do not mix. Pour some cooking oil into a glass of water and it floats on top in its own layer. Shake the glass, and the oil soon comes back together. Grease on your hands or on a plate is oil too, so water just slides over it and leaves it behind.
Soap is made of special molecules with two different ends. One end, the head, loves water. The other end, a long tail, loves oil and stays away from water. When soap meets grease, the tails push into the grease, and the heads stay outside in the water. Soon the grease is covered with soap molecules, like pins in a pincushion.
Now you rub. Rubbing breaks the grease into tiny drops. Soap molecules quickly surround each drop, with their tails inside and their heads facing out. To the water, each little ball now looks like something it likes, so the water can pick it up. When you rinse, the drops are carried down the drain.
Soap also helps against germs. Many germs stick to the oil on your skin, so they wash away with it. Soap can even break apart the fatty outer layer that some germs have. That is why Taiwan's Centers for Disease Control teaches five steps: wet, rub, rinse, scoop, and dry. Rub with soap for at least 20 seconds.
People have been making soap for a very long time. The oldest records of something like soap come from Babylon, about 2800 BC. Soap is made by mixing fats or oils with a strong chemical called lye. So the next time you wash your hands, remember the tiny molecules at work, and give them time to do their job.

Look closely at a drop that is floating away: every blue head faces out toward the water, and every yellow tail points in toward the oil.
