A seed with no water
Nothing moves. Now add water slowly and find the point where the seed wakes.

A seed can lie in a paper packet for years and do nothing. Put it in damp soil, and within days it is a plant. In a 3D model, give a seed water and warmth and watch it wake: first a root going down, then a shoot going up. Turn the seed upside down and see whether it gets confused. Grow it in the dark and see what goes wrong. Last, decide which seeds in four different places will wake up.
A seed is a baby plant, asleep, packed together with its lunch inside a tough coat. It stays asleep until it has water, the right warmth, and air. Then it swells and splits its coat. The root comes out first and grows down, and the shoot follows and grows up. The young plant lives on its packed lunch until its leaves reach the light and it can make food for itself.
3D Model · 3D 模型
Drag to turn the model, and scroll or pinch to zoom. You are looking at a slice of soil with one seed in it. First pull the Water slider all the way down. Does the seed grow? Bring the water back, and try making it very cold. Then let the seed grow and watch what comes out first. Last, switch on Upside down, and then In the dark.

A teaching model. The numbers for water and warmth are examples chosen for the model. Real seeds differ a great deal: some wake just above freezing, and some need light or darkness as well. The lunch meter is also an example. In many beans the two food halves are lifted above the ground with the shoot. Here they stay where they are, to keep the picture simple. The growth shown would take days, not seconds.

Reading ·
A dry bean looks like a small stone. You can keep it in a jar for a year, and nothing will happen. Then you put it on wet cotton, and in a few days it has a root. How did it know that the time had come?
A seed has three parts. On the outside is a tough coat. Inside is a very small plant, already formed, with the start of a root and the start of a shoot. The rest is stored food. In a bean, the food fills the two thick halves that you can pull apart with your fingers.
The little plant is alive, but it is asleep. It will stay asleep until three things are right: water, warmth, and air. Some kinds of seed need light or darkness too. Waiting keeps a seed from starting to grow in a dry month or in the middle of winter.
When the time is right, the seed soaks up water and swells until its coat splits. The root comes out first and grows down. Then the shoot grows up. It does not matter which way up the seed is lying. A plant can feel the pull of gravity, so its root grows toward the pull and its shoot grows away from it.
Until its leaves open, the young plant cannot make food. It lives on what is packed in the seed, and it needs oxygen from the air to use that food. This is a race. The shoot has to reach the light before the packed lunch is gone.
Bean sprouts show what happens without light. They are grown in the shade, so the plant keeps stretching upward, long and pale, and it does not turn green. In the light, the same plant would stay short, open green leaves, and begin to feed itself.

Notice the order. The seed checks the water and the warmth before it does anything. After that, the root always comes before the shoot, and the leaves come last.

2005
In the 1960s, people digging at Masada, an ancient palace in a very dry part of Israel, found date palm seeds in an old jar. Tests showed that the seeds were about two thousand years old. In 2005, a team of scientists planted one, and it sprouted. The palm that grew from it was named Methuselah.
Darwin ·
Charles Darwin was one of the first people to study this carefully, and he wrote that roots grow toward the pull of gravity while stems grow away from it. You can see it with a potted plant. Lay the pot on its side, and in time the growing tip of the stem turns and points up again. Inside the tip of a root, tiny heavy grains of starch settle to the low side and tell the root which way is down.
Kitchen · 廚房
Bean sprouts are mung beans that have been sprouted in the shade and watered until the stem grows long. A seedling kept from the light does not make the green substance in its leaves. It puts everything into a long, pale stem. In nature this helps a buried seedling to reach the surface. In the kitchen, it gives us a crisp white vegetable.
Taiwan · 台灣
In Wufeng, Taichung, the Taiwan Agricultural Research Institute keeps the National Plant Genetic Resources Center, which began work in October 1993. Seeds are dried first and then sealed and kept cold and dry. The long-term storeroom is held at 12 degrees below zero Celsius. By the end of 2005 the center was keeping 68,211 samples of crop plants, ready to be woken when someone needs them.
