How Things Work · Unit 5 · Lesson 20 ·
A microwave oven does not heat food from the outside like a stove. Invisible waves make the water molecules inside the food flip back and forth, and the food heats itself. Look inside a 3D oven, stop the turntable to find the hot spots, and see what ice, an empty plate, and a metal fork do.
A microwave oven fills a metal box with invisible waves called microwaves. The waves make the water molecules in food flip back and forth billions of times a second. The jostling molecules bump into one another, and that motion is heat. So the food heats itself, while a dry plate stays cool.

Drag to turn the view, and scroll or pinch to zoom. The yellow lines are microwaves bouncing between the metal walls, and the orange glow on the floor shows where they are strong. The food changes color from blue (cold) to red (hot). The bubble on the left is a close-up of water molecules. Switch the turntable off, choose what goes on the plate, and drag the time slider.

A teaching model, not a measurement of any real oven. The temperatures come from a simple formula, and the pattern of hot spots is the simplest one possible; real ovens have more complicated patterns, and food also heats by passing warmth from one part to the next. The waves are slowed down enormously so you can see them: real ones flip about 2.45 billion times a second. Real water molecules are far too small to see.

Reading ·
Put a bowl of cold soup in the microwave oven and press start. One minute later the soup is steaming. But touch the rim of the bowl: it is hardly warm. A stove heats the pot first, and the pot heats the soup. A microwave oven seems to skip the pot. How does it do that?
Inside the oven is a part called a magnetron. It makes microwaves, which are invisible waves like the ones that carry radio and Wi-Fi signals. The cooking space is a metal box, and microwaves bounce off metal, so they fly back and forth inside. Even the window in the door has a metal mesh in it. The holes are much smaller than the waves, so light gets out but the microwaves stay in.
Now for the trick. A water molecule has a slightly positive end and a slightly negative end. The microwaves push and pull on these ends, first one way and then the other, about 2.45 billion times a second. The water molecules try to follow, flipping back and forth. They bump into the molecules around them, and all that jostling is heat. The food heats itself.
That explains the cool bowl. A dry plate or bowl has almost no water in it, so the waves pass right through. It also explains why ice heats slowly: in ice, the water molecules are locked in place and can hardly turn. And because the bouncing waves are strong in some places and weak in others, the oven has hot spots and cold spots. The turntable carries the food through both.
Metal is a different story. Microwaves cannot pass through metal. At sharp points, like the tips of a fork or the edges of crumpled foil, electric charge piles up and jumps through the air as sparks. So never put metal in a microwave oven. Eggs in their shells and tightly sealed containers are dangerous too, because steam builds up inside until they burst.
The idea was found by accident. In 1945 an American engineer, Percy Spencer, was working with radar when he noticed that a candy bar in his pocket had melted. The first thing he cooked on purpose was popcorn. Are microwaves dangerous to eat? No. They do not make food radioactive, and the moment the oven stops, the waves are gone. Only the heat is left.

Try It in the Model ·
Try the empty plate, too. With no water to grab, the waves have almost nothing to heat.
The plate turns, so every bite takes its turn in the hot spots. The whole plate warms up together.
Now each bite stays put. Some turn red very quickly, and some stay blue. This is why food can be burning hot in one place and cold in another.
Look at the close-up: the molecules in ice barely move. After two minutes the ice in this model is still frozen.
Sparks jump from the tips of the fork. In a real oven this can damage the part that makes the waves. Only try it here.

Myth vs. Fact ·
No. Microwaves only make molecules turn and shake. They cannot change what the food is made of, and they vanish when the oven stops.
A microwave oven cooks food from the inside out.

The microwaves can leak out through the holes in the door.
The holes in the metal mesh are much smaller than the waves, so the waves bounce back while light passes through.
The plate gets hot because the microwaves heat it.
